We kept the vinification process for Mr P Pinot Noir traditional. The grapes were hand harvested, destemmed and fermented using whole berries. To add some complexity, 10% of the bunches were whole bunch fermented. Fermentation took place in stainless steel tanks at 28ºC, with regular punch downs. When fermentation was complete, the wine was pressed into 2nd, 3rd and 4th fill French oak barrels where they underwent MLF. After 11 months in barrel, the wine was racked and bottled.

They hope it’s not too bland.He raises his brow and has a look around.
He gives a subtle wink, the wine makers have done him proudAs Mr. P has no time to chat,
he casually walks away with a feather in his hat.
