Winemaking
The grapes were harvested from our southern most Sauvignon Blanc block late in the month of April. Picking was done over a 4 week period, ensuring we picked optimal botrytis bunches.
Fermentation started in oak barrels and was kept on the gross lees for 6 months, before being racked to stainless steel for maturation for another 6 months adding structure to the wine. The naturally high acidity and balanced sugars resulted in a clean style wine that oozes sophistication and drinkability.
